Pulled from the critically-acclaimed Food and Cooking of Shanghai: Recipes and Stories from China’s Most Dynamic City, these two easy-to-follow recipes were crafted by Simon Fan, a New York-based cookbook author and food photographer.

Shanghai, China’s most dynamic city, offers a fascinating cuisine that was born during the city’s dramatic ascent from a port to a global metropolis. Rooted in local dishes of peasant cooking origin, Shanghainese cuisine has, over time, incorporated dishes and cooking techniques from other regions, as well as influences from other countries. In Food and Cooking of Shanghai, Shanghai native Simon Fan draws on years of research and culinary training to present over 100 mouthwatering dishes from his hometown, with clear, easy-to-follow instructions. He garnishes his recipes with history, food lore, and personal stories.

Mr. Fan will also share the stories and talk about the experience of writing his cookbook with Chef Kian Lam Kho, author of the award-winning cookbook Phoenix Claws and Jade Trees: Essential Techniques of Authentic Chinese Cooking.

About Simon Fan

Simon Fan is a New York-based cookbook author, food photographer, and banking professional. He is the creator of SoyRiceFire.com, a site dedicated to Chinese recipes, ingredients, and cooking techniques.

Born and raised in a food-loving family in Shanghai, Simon developed a fascination with cooking at an early age. Later, he moved to the US to pursue an MBA degree and embarked on a banking career. Out of nostalgia and his love for cooking, he spent his free time researching the culinary history and traditions of Shanghai and other regions in China—and cooking the dishes that connected him with his heritage. To sharpen his cooking skills, he completed the Classic Culinary Arts program at the International Culinary Center in New York, and he has studied with a master chef in Shanghai during his stays and visits there.

Simon credits his training and experience in banking for instilling in him the disciplines of attention to detail and continuous improvement through iteration, which he finds essential for writing a cookbook.
